We use Elkonin boxes. Basically, I have a train with three cars: the engine (beginning sound), the caboose (ending sound) and the car in the middle (middle sound). My students practice with chips and letters as we introduce beginning, ending, and middle sounds.
Right now, we are punching out the ending sound. They love to do this and love the hand motions (We use Heggerty).
I do the same as mopar. Using the chips really helps them to isolate that last sound. I have seasonal/themed mats with the Elkonin boxes on them.
We also do a lot of fun sorts on the smartboard. I will initially say the name of pictures, emphasizing the last sound.
I have used students as well. For example: I would have 3 students stand next to each other (shoulder to shoulder) and I would give the class a word. We would segment the word as I hold my hand over the heads of the students. Then we transition to the students saying their "sound".
